I used to have to collect them with my grandmother when we would go on for a walk where they were growing. For those who don't know, a dryland fish is a type of mushroom that is really quite tasty. As to highland fish, I never heard that exact use around my area of Kentucky, but I can see where that term could be used instead of dryland fish.
