In Tucson, my impression is that a no-naming strategy is used in many

cases (I don't usually eat in such fancy places, though), by saying "The

person serving you this evening will be Cindy", and Hello, my name is Cindy,

and I will be serving/waiting on you(/your table) this evening." This in

itself, of course, is sociolinguistically interesting.
