For what it's worth (perhaps not much, from the linguistics perspective),

Winburne's _Dictionary of Agricultural and Allied Terminology_ (1962)

defines sherbet as "a dessert made from water with the addition of milk

or skim milk solids, stabilizer, sugar, with or without egg whites, and

natural flavoring, frozen to the consistency of ice cream."
