I've been to pig-pickin's, so called, in North Georgia (Maxeys, Union

Point-- now of ill-fame). But not just any barbecue is a pig-pickin':

only the real ones, where you go whole-hog, splitting the hog flat and

cooking it between two grills. Then you pick off bites without burning

your fingers, if possible.
