The issue in my example was the lack of agreement between the singular "his or her" and an antecedent "they." I have no problem (in spoken usage) with the contemporary singular "everyone" followed by plural "they/their"; the example I cited earlier starts with generic "they" (perfectly fine) and then inexplicably switches to singular when your own "their" would be logical and problem-free.
